How To Make Vegan Spelt Brownies
Ingredients
1 1/2 cups organic coconut sugar
2/3 cup grapeseed oil or coconut oil
1/4 cup molasses
6 tbsp organic ground flax + 1 cup water (flax egg mixture)
1 tbsp apple cider vinegar
2 tsp organic vanilla
1 cup organic cacao powder
2 1/4 cups organic spelt flour (if using all purpose flour, use 2 3/4 cups flour – consistency of brownie should be thick and sticky)
1/2 tsp baking soda (aluminum free)
Instructions
- Preheat your oven to 350 degrees Fahrenheit
- In a small mixing bowl, mix your flax eggs and set aside to congeal
- In another mixing bowl add your coconut sugar, grapeseed oil, molasses and give it a mix
- Then add your flax eggs into the mixing bowl with the grapeseed oil, molasses and sugar mixture and mix well
- Add vanilla
- Add cacao powder, flour and baking soda and mix together until just combined
- Line a 9” x 13” baking tray with parchment paper
- Pour the brownie mix into the pan
- Bake at 350 Degrees for 25-30 minutes
- Let cool completely before cutting

Recipe notes: When we made the almond flour brownies we noticed the batter was very sticky and thick. We had to add about 1/4 to 1/2 a cup of water to make the batter be more manageable to mix.
