Quick, Easy, and Delicious: Favorite Meals of the Month

summer meals we have on repeat this month

Isn’t it a true joy to find meals that tick all the right boxes? I’m talking quick, easy, delicious, and, of course, nutritious. This month, we have some of those reliable dishes on repeat at our table, and I can’t wait to share them with you. If you’re like me, tired of spending long hours in the kitchen yet yearning for wholesome homemade meals, these recipes will be a game-changer.

Our 5-Minute Easy Peasy Spelt Soda Bread Recipe

I absolutely adore a good loaf of bread. It’s not just about the satisfaction of creating something from scratch, but it’s also the versatility of it. A fresh loaf can be a game-changer at meal times. One of my go-to favorites is the no-fuss, five-minute miracle, my Easy Peasy Spelt Soda Bread.

Spelt Soda Bread Recipe – The Hai Path

Sounds too good to be true, doesn’t it? But trust me, in just five minutes of prep, this nutty, aromatic bread comes together and then works its magic in the oven, filling your home with that irresistible scent of fresh-baked goodness. While it’s baking, you have enough time to whip up some fabulous sides or dig around in the fridge for anything that tickles your fancy. The possibilities are endless!

Speaking of possibilities, I have a treat for you. In my latest YouTube video here and below; I share my adventure of pairing this scrumptious bread with a variety of sides. From a humble guacamole attempt that didn’t quite hit the mark (but hey, we all have those days, right?), to a baba ghanoush-inspired spread made with what I had on hand, zucchinis, red onions, a splash of grapeseed oil, and a squeeze of lemon. The result? A delightful, creamy spread that added a pop of flavor to the bread.

But the flavor combinations don’t stop there! We also tried slathering on some raw creamed honey. The natural sweetness of the honey complements the nuttiness of the spelt in a way that can only be described as divine.

And if you’re in the mood for simple, timeless elegance, try tearing off a piece of this bread and dipping it in some good quality olive oil. It’s an understated yet luxurious treat that will leave your taste buds singing.

Protein-Packed Perfection: Our Quick and Versatile Chickpea Salad

Who doesn’t love a good, hearty salad, especially one that’s packed with protein and bursting with flavor? Our next star of the show is the Chickpea Salad. This is no ordinary salad, folks, it’s a meal in itself.

The Best Chickpea Salad Recipe – The Hai Path

You’re going to love how this salad comes together with just a handful of fresh ingredients – chickpeas, the zing of lemon juice, the right blend of seasonings, crunchy red onion, and fresh parsley. Together, they create a salad that’s not only refreshing but also incredibly satisfying.

This chickpea salad is a champion multi-tasker. It’s perfect for meal prep, makes for an excellent side dish, or, my personal favorite, serve it atop a bed of greens for a light and nutritious meal. If you’re feeding a crowd, this salad has you covered.

Head over to the full recipe linked here, and you’ll see how simple it is to whip up this protein-packed goodness. Go on, give it a whirl and let me know how you enjoy this delicious and versatile chickpea salad!

East Meets West: Quick, Customizable Sesame Noodle Bowl

Now, let’s take our tastebuds on a little journey to the East with an Asian-inspired noodle dish. If you’re a fan of peanut noodles, then you’re going to love this quick and easy recipe that we’ve been loving this month.

This isn’t your run-of-the-mill noodle dish, it’s a riot of flavors and textures. You can load it up with any veggies you have on hand, although crunchy greens like cabbage, snap peas, and carrots work wonders in this dish, adding a delightful crunch and vibrant color.

But what really brings this noodle dish to life is the dressing – a simple yet delicious mix of sesame oil, coconut aminos, onion powder, and sesame seeds. For those not in the know, coconut aminos is a fantastic soy sauce alternative, offering a savory-sweet taste that will elevate your noodle game. It ties together all the elements of this dish, giving you a satisfying meal that’s both healthy and full of flavor.

So, there you have it, a dish that’s as enjoyable to make as it is to eat. And the best part? It’s fast, it’s delicious, and you can tweak it to your liking. Try it out, and let these noodles become your next quick and easy mealtime favorite!

This recipe will be written officially soon, but here’s the run down of what’s in this delicious noodle salad:
