Sesame Noodle Salad
Ingredients:
Chickpea Noodles
1 medium sized cabbage
2-3 shredded carrots
Green Onions
1-2 red bell peppers
Sauce:
1/4 cup coconut aminos
2 limes
4-5 tbsp sesame oil
4 tbsp olive oil
5 tbsp sesame seeds
2 tbsp onion powder
Optional 1 tsp cayenne pepper
Optional 1 tsp garlic (fresh or powder)
Instructions:
- Cook your chickpea noodles according to package instructions
- Chop and grate all your vegetables and add to a bowl
- Mix your sauce ingredients together in a mixing bowl
- Drain and rinse chickpea noodles and add to the same bowl with the vegetables
- Add half of the sauce into your noodles and toss
- Then add the rest of the sauce and toss
- Adjust to taste, add salt, pepper, onion powder, seasonings
- Garnish with freshly chopped spring onions
- Enjoy right away or refrigerate in air tight container for meal prep
