This month, we have some of those reliable dishes on repeat at our table, and I can’t wait to share them with you. If you’re like me, tired of spending long hours in the kitchen yet yearning for wholesome homemade meals, these recipes will be a game-changer.

Our 5-Minute Easy Peasy Spelt Soda Bread Recipe

I absolutely adore a good loaf of bread. It’s not just about the satisfaction of creating something from scratch, but it’s also the versatility of it. A fresh loaf can be a game-changer at meal times. One of my go-to favorites is the no-fuss, five-minute miracle, my Easy Peasy Spelt Soda Bread.

Spelt Soda Bread Recipe – The Hai Path

Sounds too good to be true, doesn’t it? But trust me, in just five minutes of prep, this nutty, aromatic bread comes together and then works its magic in the oven, filling your home with that irresistible scent of fresh-baked goodness. While it’s baking, you have enough time to whip up some fabulous sides or dig around in the fridge for anything that tickles your fancy. The possibilities are endless!

Speaking of possibilities, I have a treat for you. In my latest YouTube video here and below; I share my adventure of pairing this scrumptious bread with a variety of sides. From a humble guacamole attempt that didn’t quite hit the mark (but hey, we all have those days, right?), to a baba ghanoush-inspired spread made with what I had on hand, zucchinis, red onions, a splash of grapeseed oil, and a squeeze of lemon. But what really brings this noodle dish to life is the dressing – a simple yet delicious mix of sesame oil, coconut aminos, onion powder, and sesame seeds. For those not in the know, coconut aminos is a fantastic soy sauce alternative, offering a savory-sweet taste that will elevate your noodle game. This recipe will be written officially soon, but here’s the run down of what’s in this delicious noodle salad:

Sesame Noodle Salad

Ingredients:
Chickpea Noodles
1 medium sized cabbage
2-3 shredded carrots
Green Onions
1-2 red bell peppers

Sauce:
1/4 cup coconut aminos
2 limes
4-5 tbsp sesame oil
4 tbsp olive oil
5 tbsp sesame seeds
2 tbsp onion powder
Optional 1 tsp cayenne pepper
Optional 1 tsp garlic (fresh or powder)

Instructions:

  1. Cook your chickpea noodles according to package instructions
  2. Chop and grate all your vegetables and add to a bowl
  3. Mix your sauce ingredients together in a mixing bowl
  4. Drain and rinse chickpea noodles and add to the same bowl with the vegetables
  5. Add half of the sauce into your noodles and toss
  6. Then add the rest of the sauce and toss
  7. Adjust to taste, add salt, pepper, onion powder, seasonings
  8. Garnish with freshly chopped spring onions
  9. Enjoy right away or refrigerate in air tight container for meal prep
