How To Make Oil Free Spelt Chocolate Banana Muffins

Ingredients

6-7 ripe bananas mashed
4 tbsp ground flax + 10 tbsp water
1 1/4 cup coconut sugar
2 tbsp apple cider vinegar
1 cup cacao powder
1 tsp baking soda (aluminum free)
2 1/2 cup spelt flour
Shredded coconut (optional)
Vegan chocolate chips (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit
  2. In a small mixing bowl, mix up your flax eggs
  3. In a large mixing bowl, mash your ripe bananas
  4. Add coconut sugar and whisk together
  5. Combine your flax egg with the banana mixture, and whisk to combine
  6. Add 2 tbsp apple cider vinegar and mix to combine.
  7. Add cocoa powder, baking soda, and spelt flour to the wet ingredients and mix until incorporated.
  8. Prepare your muffin or cupcake tins with liners
  9. Spoon into muffin tins and sprinkle with shredded coconut if you’d like
  10. Bake at 350 degrees Fahrenheit for approximately 25-30 minutes until muffins are cooked. (Stick a chopstick into them and comes out clean)
  11. Cool completely and enjoy!

Chef notes: Add whatever toppings you want, you can add coconut shreds, chocolate chips, chopped up dates, walnuts, this recipe is so versatile – make it your own!

Notes

  • Because these are oil free, it’s best to cool them completely before eating because they will tend to stick to the muffin liners if eaten warm.
