If you’ve got a sweet tooth like mine and a love for all things vegan, then you’re in for a real treat today! I’m thrilled to share my latest kitchen adventure – Vegan Spelt Brownies. That’s right, we’re talking deep, dark, chocolatey deliciousness, minus the dairy and with the added wholesomeness of spelt flour.

These babies are a game-changer! I’ve found the magic balance between ooey-gooey and cakey textures – these brownies are just so irresistibly moist and fudgy, you’ll be reaching for seconds (or thirds, no judgement here). And guess what? The recipe is as easy as pie… or, well, brownies!

I promise, you don’t need to be a whizz in the kitchen to whip up these heavenly squares of joy. With a handful of simple ingredients, a mixing bowl, and a pinch of love (the secret ingredient in all great baking, of course), you’ll be on your way to a chocolate lover’s paradise. So, tie up your apron, crank up your favorite tunes, and let’s bake some delightful Vegan Spelt Brownies together!

How to make the best whole food, plant based, vegan spelt brownies?

Ingredients

1 1/2 cups organic coconut sugar

2/3 cup grapeseed oil or coconut oil

1/4 cup molasses

6 tbsp organic ground flax + 1 cup water (flax egg mixture)

1 tbsp apple cider vinegar

2 tsp organic vanilla

1 cup organic cacao powder

2 1/4 cups organic spelt flour

1/2 tsp baking soda (aluminum free)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit
  2. In a small mixing bowl, mix your flax eggs and set aside to congeal
  3. In another mixing bowl add your coconut sugar, grapeseed oil, molasses and give it a mix
  4. Then add your flax eggs into the mixing bowl with the grapeseed oil, molasses and sugar mixture and mix well
  5. Add vanilla
  6. Add cacao powder, flour and baking soda and mix together until just combined
  7. Line a 9” x 13” baking tray with parchment paper
  8. Pour the brownie mix into the pan
  9. Bake at 350 Degrees for 25-30 minutes
  10. Let cool completely before cutting
  11. Enjoy your fudgy brownie!

  • 6 tbsp organic ground flax + 1 cup water (flax egg mixture)

  • 2 1/4 cups organic spelt flour (adjust if needed, dough should be thick and sticky)
    If using all purpose flour, use 2 3/4 cup flour (adjust if needed)

  • 1/2 tsp baking soda (aluminum free)

Directions

  • Preheat your oven to 350 degrees Fahrenheit
  • In a small mixing bowl, mix your flax eggs and set aside to congeal
  • In another mixing bowl add your coconut sugar, grapeseed oil, molasses and give it a mix

  • Add vanilla
