Welcome to our kitchen! It’s the end of the year, everyone is looking for delicious cookie and baking recipes – so today we’re whipping up something special and delightfully minty – our Chocolate Mint Vegan Spelt Cookies! These cookies are not just incredibly tasty but also vegan-friendly and made with wholesome ingredients. They are perfect for family baking sessions and for anyone who loves a hint of mint in their treats. So, let’s get started!

Ingredients:

  • 1 cup melted organic coconut oil
  • 1 3/4 cups organic coconut sugar
  • 2 flax eggs (2 tbsp organic ground flaxseed mixed with 4 tbsp water, let sit for 5 minutes)
  • 1 tsp vanilla extract
  • 2 tsp peppermint extract (adjust to taste)
  • 1/2 cup organic cacao powder
  • 3 cups organic spelt flour (we love using home-milled spelt for the best flavor!)

Directions:

  1. Preheat and Prepare: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Mix Wet Ingredients: In a large bowl, whisk together the melted coconut oil, coconut sugar, flax eggs, vanilla extract, and peppermint extract until well combined.
  3. Add Dry Ingredients: Sift in the cacao powder and then gradually mix in the spelt flour until the dough comes together. It should be firm but pliable. (Once mixed together you can refrigerate for 2 hours or bake as is. We normally don’t have patience so we just bake them right away)
  4. Shape the Cookies: Using a tbsp measure or cookie scoop, form the dough into small balls and place them on the prepared baking sheet.
  5. Bake with Love: Bake in the preheated oven for 10-12 minutes. The cookies should be firm on the edges but soft in the middle.
  6. Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • Customize Your Minty-ness: Feel free to adjust the amount of peppermint extract to suit your taste. Start with less, as you can always add more!
