Ingredients

5-6 medium ripe organic bananas
1 cup organic coconut sugar
2 cups plant based milk or water
4 tbsp oil (optional – hemp, coconut, grapeseed)
2 tbsp apple cider vinegar
2 tbsp organic ground flax seeds
4 1/2 cups organic Spelt flour
1 tsp baking soda (aluminum free)

Instructions

  1. Prepare a skillet of choice, we like using our cast iron skillet and preheat on medium.
  2. Add all the ingredients to a blender
  3. Blend until just smooth. (Due to humidity levels of individual areas, adjust milk/water amount as needed)
  4. Add 2-3 tsp of oil to your skillet, we like grapeseed oil
  5. Pour pancake batter into skillet and cook for about 1-2 minutes on one side and flip, cook for another 1-2 minutes. Repeat with the rest of the batter.
  6. Serve with your favorite sweetener, we love date syrup, honey, maple syrup, or agave nectar, and enjoy!
