How to make The Best Chick Pea Salad

Ingredients:

12 cups of cooked chickpeas – we prefer to make our own

2 large tomatoes

1-2 large bunches of fresh parsley

2-3 lemons

1 red onion

3/4 cups of olive oil

Spices Salt and pepper to taste

1 tsp cumin powder

3 tbsp Celtic sea salt

1 tbsp turmeric powder

2 tbsp onion powder

Instructions:

  1. Add all your chickpeas to a large bowl
  2. Finely chop your parsley, fresh tomatoes, and red onion, and add them to the bowl
  3. Add your oil and lemon juice
  4. Add your spices and mix well

Making Mediterranean Chickpea Salad

5. Refrigerate for at least 1 hour if you’re patient
6. Enjoy right away if you’re not patient

Serve on a bed of fresh greens and lettuce, add cayenne for a kick of spice, or eat on it’s on. It’s tasty as is for breakfast, lunch, dinner, or a snack packed full of protein and nutrients!
